Red, White and Blue

We headed up to the cabin to celebrate the independence of Lindsay's nation ;) But we don't have too many pictures to show for it as Andy was laid low with a muscle spasm in his neck. This meant we were confined to mostly lolly-gag (Lindsay's word...) around in the sun - tough life - but, we did work (?) and do some amazing cooking on the BBQ. Lindsay's grandfather joined us a day later, and we played some competitive games of petanque (boules) which Terry inevitably ended up winning. The Palmquist family (Terry and her dad) both have amazing aim. It also felt miraculous to see how green and alive everything was, considering the extremely harsh winter we had and that we were under a foot of snow only about a month ago!

Andy has learned to barbeque everything since moving to California. He has done the usual fish, meat, chicken...but now can add bruschetta and corn to his culinary expertise. He keeps saying: "I've never done this before...you do know that, right?" Let's just say, he is batting 100 and we want to try pizza on the barbeque before the summer is out.

Below is the recipe for the Easiest (and Yummiest) Cobbler ever. We got the recipe from Bon Appetit for Summer 2010; they used only blueberries. But in honour of the 4th of July, we added raspberries and made it a Red, White and Blue Cobbler. It was a hit all around.

Cobbler is a uniquely American twist on the traditional English crumble. Think summer berry crumble with fluffy and moist scones on top.

No matter what side of the pond you're on: red, white and blue cobbler will be a hit!

For those of you who want to amend the recipe as Lindsay did to include raspberries, simply substitute half the amount of blueberries on the recipe for raspberries and keep all other amounts the same. For UK users, you will probably want to bake it at 225 centigrade.
